Anyone know of a non-dairy substitute for the cream in this? I may try some soy milk, but anyone with a better alternative, please share.

Try with Soy milk or coconut cream…It may not taste as original as this method but will help you.

Store your spices in either a glass or stainless steel container…You can get those from Bed, bath & beyond.

what’s the difference between grated and shredded ginger?

You shred with a knife and grate with a grater!
Seriously, that’s pretty much it.
As long as you don’t grate too fine they are very much the same.

Hi, it’s traditional Jain or also vedic or ayurvedic cooking. Also, the asafetida (hing) is a good substitute and better for digestion. :-)
